Hello Pike Valley Family Farm! I had the pleasure of coming upon your products at Good Foods Market in Lexington about a month ago. I have never had such delicious meat! I enjoy cooking more than ever now! About a week or two ago, my husband took me out to a nice dinner with some friends of ours. We went to Shaker Village in Harrodsburg, KY. Several of us had fried chicken and my husband had another chicken dish. Much of our conversation that night was about the delicious food! My friends and I are still working through the meat we purchased a few weeks ago and we’ve all been incredibly impressed with the difference in quality and, particularly, taste. We recently decided to cook a dish with store-bought, industrial raised chicken to see if there really was a great difference. Compared to your chicken, the store-bought was almost tasteless, somewhat resembling mushy cardboard. It was astounding. I also cooked the beef short ribs last night for some friends. Again, there is no comparison with store-bought beef!

I’m sure you already have plenty of recipes at your disposal, but in case you would like another I’d like to share with you how we cooked the short ribs, since they turned out so delicious. We had two packages (8 ribs total). It can easily be tailored to suit quantity and taste, so here it is:
We served the rib meat over egg noodles, but there are all kinds of other things you can use. As the sides we had homemade buttermilk biscuits, sauteed green beans, and baked apples (baked in white wine, water and agave nectar). I’m sure we could have eaten everything the same day as cooking, but we didn’t have time to do it all in one day, so that’s why we refrigerated the ribs overnight. Anyway, if you don’t use the recipe, I just wanted to take some time to share with you how pleased we have been thus far and say thank you. We appreciate your dedication to such a good thing.
